And surfers head for San Juan del Sur, whose holy grail of wave riding is Popoyo. Nicaragua has great waves year round, although primetime is March to November. Then try a new take on the sport: Surfing down the Cerro Negro Volcano at 35 mph (56 kmph) on a wooden board.

Nicaraguans are “sons of corn,” a culinary inheritance from indigenous tribes that lived in the area. Traditional dishes such as nacatamal and indio viejo are corn-based, as are snacks and sweets such as atolillo and perereque. Of course, fresh fish, succulent steaks and tropical fruits galore go into the finest of Nicaraguan dishes. From the choice of hotels, excursions, and meals; everything was 5star.  Juan Carlos, Danny, Alejandro were great guides.  Jaime and Nestor handled the roads (or lack thereof) with masterful skill.  Jennifer made sure that everything (well except for the ride back to the airport) went smoothly.  It was the first time in my many years of traveling that the operator wanted to speak DIRECTLY to me, to make sure everything was ok.  Usually, they only speak to their team members.  WOW!!
