Nature lovers make themselves at home in the cloud forests of Mombacho to Matagalpa, in the tropical forests of the Rio San Juan rain forests. Nicaraguans are “sons of corn,” a culinary inheritance from indigenous tribes that lived in the area. Traditional dishes such as nacatamal and indio viejo are corn-based, as are snacks and sweets such as atolillo and perereque. Of course, fresh fish, succulent steaks and tropical fruits galore go into the finest of Nicaraguan dishes. From the choice of hotels, excursions, and meals; everything was 5star.  Juan Carlos, Danny, Alejandro were great guides.  Jaime and Nestor handled the roads (or lack thereof) with masterful skill.  Jennifer made sure that everything (well except for the ride back to the airport) went smoothly.
